Start With the Korean Meal Pattern
Korean home cooking becomes easier when you understand the pattern behind the meal. A typical table is not only one large main dish. It is usually a small balance of rice, soup or stew, protein, vegetables, fermented side dishes, and a sauce or seasoning. Beginners often try to cook a restaurant-style dish first, but home cooking is more flexible and less dramatic. A bowl of rice, egg soup, seasoned spinach, and kimchi can be a complete beginner meal.
The most useful first skill is learning how to season gradually. Soy sauce, doenjang, gochujang, kimchi, salted seafood, and packaged broth can all be salty. Add half first, taste, then adjust. This habit prevents the most common beginner mistake.

- Sigeumchi Namul: teaches blanching vegetables and seasoning by hand.

After these dishes feel comfortable, move to bibimbap, bulgogi, japchae, tteokbokki, and kimchi jjigae.
How to Control Spice
Not all Korean food is spicy, but many famous dishes use gochujang or gochugaru. To reduce heat, use less chili paste, add more broth, add tofu or egg, and serve the dish with plain rice. To increase heat, add gochugaru in small amounts instead of adding a large spoon of gochujang, because gochujang also adds sweetness, salt, and thickness.
